We've had Wagyu before (including at Morimotos), and this was definitely up there. I'm not sure if I've gotten better at cooking it, or if this was just very high quality, but I'd rank this on par with the $700 NY Strip I got from another website. Incredible "value" when compared to much more expensive cuts. It was every bit as tender and delicious as much more expensive cuts I've tasted at a MUCH lower price. We cut into ~1/4 strips while still mostly frozen, salted for 10-15 minutes, and seared on RIPPING hot cast iron for 20-30 seconds per side. Rest 30-60 seconds and enjoy. Melts in your mouth!
