Very little gristle and silver skin. It was butchered very nicely, often ribeyes come with a bunch of not good eats. Delicious steak, while it doesn't have the marbling of corn fed beef the taste and texture were far superior.

While two of the four filet steaks arrived with completely broken seals, we decided to thaw and eat them, and they were actually very tender and good tasting. However, having to immediately cook or repackage meat due to thin, failed vacuum packaging is still a major quality control issue for a premium service.

Not up to usual standards. Last 2 steaks were not as tender as they usually are. Lots of silver skin. Hard to remove.

1 of the 4 ribeyes was not up to par. I had to trim the silver skin outside like I trim a brisket. It was disappointing but the other 3 were excellent.
