Wild Boar meat is similar to domestic pork, but the flavor has a slightly sweet and nutty taste to it, derived from their wild foraging diet. Our Wild Boar Tenderloins are lean with low fat content. Searing, roasting and grilling work well, but be careful not to overcook and dry out these lean cuts of meat.

Roger Gerber of Blackwing Meats always had an interest in healthy and delicious protein options. In fact, he actually started the business in 1996 raising ostriches (a surprisingly nutritious red meat) before expanding to offer bison (buffalo) a few years later. He knew the demand was strong and people were looking for delicious, healthy alternatives or complements to their everyday meat rotation. Now working with various independent farms throughout the country, Blackwing has grown to become a leading provider and trusted source of our game meat — rich and robust Wild Boar, and our tender, mellow pasture-raised Elk and Venison.

Rich & Robust Wild Boar

Wild Boar has a rich, nutty and full-bodied flavor profile with a unique juicy succulence that sets it apart from your everyday domesticated pork. First introduced in the 1500s by some of the earliest Spanish explorers, Wild Boar has since grown to be an invasive species in the South — wreaking havoc on farms, crops, livestock and the environment. Blackwing partners with local companies to professionally trap these destructive animals, removing a major competitive pressure on the land and helping to control the population. After they’re trapped, these hogs are fed a natural diet of roots, acorns and vegetation (mirroring what they would get in the wild) to ensure a consistently rich and robust taste without any gaminess.

North American Elk and Venison

Raised on lush, natural pastures, our 100% grass-fed North American Venison and Elk are a fantastic heart-healthy protein source with a mellow, clean flavor. No antibiotics or hormones are administered, and both Elk and Venison develop at their own pace. Venison is oftentimes compared to beef, but smoother and firmer, with a mild taste. Elk has a similar flavor profile with a hint of sweetness and a coarser grain — a favorite among hunters. Both are incredibly lean and cook quickly because of their lower fat content, and are full of rich nutrients and vitamins to support a healthy diet.
