Grilled Wolffish with Roasted Garlic Mayo and Lemon

Wolffish stays simple — a quick marinade, a hot grill, and a finish of roasted garlic mayo and lemon vinaigrette.

Wolffish has a clean, fresh flavor and a firm texture that holds up beautifully on the grill. Keep it simple with a garlicky, lemony finish, and serve on its own or over wild rice or greens.

    To make your vinaigrette, finely chop shallot and mix well with lemon juice, honey, olive oil and salt. Set aside.

    To make roasted garlic mayo, roast garlic at 340°F for 15 minutes and then let cool. Mash it well and mix with mayo in a bowl. Set aside.

    Mix garlic, fennel seeds, and oil together in a blender or food processor. Transfer to shallow dish or plastic bag. Place fillets in mixture and let marinate for at least 10 minutes.

    Heat frying pan to medium-high heat and melt butter in pan.

    Remove Wolffish from marinade and drizzle a little more olive oil on top. Grill 8-10 minutes on each side — until cooked but not dry and to an internal temperature of 125°F.

    Drizzle mayo and lemon vinaigrette on top to finish and serve as is or on a bed of greens and or wild rice.
