How to Cook TriTip Steak

A two-stage cook — hot sear, slow finish — coaxes the best out of this triangular cut from the bottom sirloin.

Directions

  1. Rub the steak with oil and season with salt and pepper.
  2. Add oil to a pan set over medium-high heat.
  3. Sear about 3 to 5 minutes per side.
  4. Transfer the steak to a baking sheet.
  5. Bake on the middle rack at 400°F, about 10 to 15 minutes per pound.
  6. Pull when the internal temperature reaches 135°F.
  7. Tent with foil and rest for 10 minutes before slicing against the grain.
