Steps

  1. Season generously with salt and pepper.
  2. Heat oil in a skillet over high heat.
  3. Cook for 3-4 minutes.
  4. Flip and cook an additional 4 minutes, continuing to flip every minute until the internal temperature is 135°F.
  5. Remove from the skillet and let rest, covered, for 5 minutes.
  6. Slice and serve.
