How To Cook Ora King Salmon

Ora King Salmon — the wagyu of seafood — bakes, pan-sears, or roasts to a tender 130-140°F finish.

Ora King Salmon is an ultra-premium fish — sometimes called the wagyu of the seafood world. The full-side fillet and the 8.5-ounce portion each have their own best methods.

Full Side Fillet

Thaw

Place the full-side fillet in the refrigerator the night before you plan to cook, allowing 8-10 hours.

Bake

After thawing, let the fillet rest in its packaging for 15-30 minutes to come close to room temperature, which promotes even cooking. Take the fillet out of the packaging and pat dry on all sides with a paper towel.

Preheat the oven to 450°F. Lay foil on a baking sheet and place the salmon skin-side down. Lightly drizzle with olive oil and spread to cover the fillet. Sprinkle with your seasonings — kosher salt, garlic powder, and freshly ground black pepper keep it simple.

Bake at 400°F for 15-20 minutes until the internal temperature reaches 140°F (per USDA guidance); the salmon will continue cooking after you pull it from the oven. Plan on about 8 minutes per inch of thickness. Many restaurants serve a less-cooked "medium" salmon at 130-135°F — a matter of personal preference. The key is not to overcook. Without a thermometer, slide a fork into the salmon and twist; it should flake easily and look opaque.

Finish with a squeeze of lemon and any garnish or fresh herbs you like.

8.5-Ounce Portion

Thaw

Place the portion in the refrigerator the night before, allowing 8-10 hours.

Pan-Sear

Let the portion sit out for 5-10 minutes to come closer to room temperature. Pat dry on all sides with a paper towel.

Heat a searing pan to medium-high and preheat the oven to 400°F. Season both sides with salt and pepper, going a little heavier on the skin side if you like.

Add a tablespoon of butter to the pan. Once melted, add the portion skin-side down and cook 1-2 minutes (longer for extra-crispy skin). Grate lemon zest over the top, flip, and cook another 1-2 minutes. If your pan is cast iron and oven-safe, transfer it directly to the oven and bake 4-5 minutes; otherwise move the portion to a baking sheet and bake 4-5 minutes.

To finish in the pan instead, sear 3-4 minutes per side. Squeeze a lemon wedge over the fish before serving.

Bake

Preheat the oven to 400°F. Place the portion on a baking sheet and bake for 10-12 minutes, or until you reach your desired internal temperature.
