Beef Brisket

Holding the animal up is a full-time job. This is the muscle that does it.

The breast — the pectoral muscles sitting between and in front of the forelegs. Cattle have no collarbone, so the ribcage is slung between the front legs by muscle alone, and the greater share of a standing animal's weight runs through here. The load builds a dense weave of collagen that only long, low heat undoes.

Most muscles work in bursts. This one is under load whenever the animal is not lying down, which on a steer is most of its life. Cattle carry the greater part of their weight on the forequarter, and with no collarbone to hand that load to the skeleton, the job falls to the chest muscles themselves.

What that produces is meat threaded with collagen in every direction — not the occasional silverskin seam you trim off a steak, but structure running through the entire thing.

Collagen is the whole story of cooking this. Below about 160°F it does essentially nothing. Held above that, with moisture around it, it slowly unwinds into gelatin — and gelatin is what makes this meat feel rich rather than merely soft. The process is measured in hours, not minutes, and it does not care how you feel about the word "done". Finish temperatures north of 200°F are normal here and would ruin almost any other cut on the animal.

It is two muscles, not one

A whole piece is a thick, fatty muscle sitting on top of a broader, leaner one, with a seam of fat between them. Their grains run at noticeably different angles. That matters at the very end: carve straight across the whole thing and half your slices will be cut the wrong way. Separate the two along the fat seam after cooking, then slice each one across its own grain.

The stall

Somewhere around 150–170°F the internal temperature stops climbing, sometimes for hours. Nothing is wrong. Moisture evaporating off the surface carries heat away about as fast as the cooker delivers it — the meat is, in effect, sweating. Wrapping it stops the evaporation and pushes through the plateau; leaving it bare gives a better exterior and takes longer. Turning the cooker up to force it mostly just dries the outside.

On price

This was cheap meat within living memory and it is not any more — barbecue demand did that, and there are only two per animal. It is still less per pound than most steak, but a real share of the weight you pay for is fat that renders out and trim you cut away. The cost per person served is higher than the sticker suggests.

How it eats

Fatty and dense going in, and either tough or unctuous coming out, with very little in between. Cooked properly the rendered fat and dissolved collagen do the work and it barely needs a sauce. Cooked to steak doneness it is close to inedible.

Common questions

How do I know when it is done?

Not by temperature alone. Most cooks land somewhere between 200 and 210°F, but the honest test is feel: a probe should slide in and back out with no resistance, like into softened butter. Two pieces from two animals can reach that point ten degrees apart, which is why a thermometer alone will mislead you.

Should I trim the fat cap?

Trim it down, not off. A thin layer — about a quarter inch is the usual figure — renders through and bastes the surface as it goes. A thick one never fully renders, insulates the meat beneath it from smoke and seasoning, and gets cut off and left on the plate anyway.

Can I braise it instead of smoking it?

Yes, and it is the older method by a long way. Smoke adds flavor and builds a crust; it does nothing to soften the meat. What softens it is hours of sustained heat with moisture present, and a covered pan in an oven supplies that perfectly well.
