Beef Loin
One primal, most of the steak menu.
The loin runs from the last rib back to the hip. These muscles hold the spine steady rather than driving the animal forward, and one of them — a hip flexor tucked underneath the backbone — is barely used at all in a four-legged animal. Little work means little connective tissue, which is why nearly everything here cooks hot and fast.
On the animal
Every other region is a link to that primal. The full butcher chart puts beef, pork and lamb side by side.
Tenderness and flavor tend to run in opposite directions on a carcass, and this is the primal where you can watch that happen over the space of about two feet.
At the front, tucked under the spine, sits the muscle that does less work than any other on the animal. In a four-legged walker it flexes the hip and otherwise just hangs there. It has almost no connective tissue, very little fat inside it, and a texture nothing else comes close to — and correspondingly little to say for itself. Move backward into the hip and the muscles start doing real work: pushing off, carrying the hindquarter. The grain coarsens, fat appears between the fibers, and the meat tastes progressively more like beef.
So the expensive end of this primal is not the flavorful end. It is the tender end. Those are two different things to pay for, and it is worth deciding which one you actually want before you get to the counter.
Where the money goes
Scarcity does the rest. There is very little of that tender muscle on an animal that dresses out at several hundred pounds — two of them, a few pounds each once trimmed — and demand does not care. The back half of the primal is physically much larger, so those cuts cost a fraction as much while carrying more flavor. If a steak budget has to stretch, it stretches back there.
The bone-in steaks are one steak in two positions
The famous crosscut steaks are not separate muscles. They are the front section sawn straight through the backbone, so each one carries the strip on one side of the bone and the tenderloin on the other. Move the saw toward the rear and the tenderloin gets thicker; move it forward and it shrinks to a sliver. Same anatomy, different position, different name on the label.
That also means they cook unevenly on purpose. Two muscles of different thickness and different ideal doneness are attached to a heat-shielding bone. Keep the tenderloin side away from the hottest part of the fire.
One slicing exception
Almost everything here is fine-grained enough that you can carve it in any direction without consequence. The exception is at the belly edge of the sirloin, where the grain runs long and loose and has to be cut across, thin. If a steak from this primal comes out chewy despite being cooked correctly, that is usually why.
How it eats
Fine grain, with the fat sitting on the outside more than running through the middle. Most of these are cut thick, which means the surface and the center want different things — a hard sear plus indirect heat, in either order, beats trying to do both at once over one fire.

Common questions
What is the difference between a T-bone and a porterhouse?
Position, not anatomy. Both are the front of the loin sawn crosswise, with the strip on one side of the bone and the tenderloin on the other. The porterhouse is cut from further back, where the tenderloin is thick — USDA specifications require at least 1.25 inches of it at the widest point. Cut from further forward, the same steak carries a smaller piece and takes the other name.
Is the loin the same as the tenderloin?
No. The tenderloin is a single muscle inside the primal, running beneath the backbone. The strip above it, the sirloin muscles behind it and the loose-grained flap at the belly edge are all part of the same section, and none of them eat anything like it.
Why is filet so expensive when it is not the most flavorful cut?
Because you are buying texture, and there is very little of it. Two per animal, a few pounds each once trimmed, against a carcass weighing several hundred. None of that scarcity has anything to do with taste — a strip or a sirloin cap will taste more of beef, for less money.
Which cut here is the best value?
The back end. The sirloin muscles and the loose flap that runs off the belly edge carry more flavor than anything from the front of the primal and cost a fraction of what the bone-in crosscut steaks do. The trade is texture: firmer, coarser grain, and they want to be sliced rather than served whole.
