Beef Plate

The only muscles on the animal that never get a day off.

The plate is the belly, below the ribs, and it takes in the diaphragm — the muscle that drives every breath the animal ever takes. Nothing else on the carcass works that continuously. Constant use loads it with myoglobin and pulls the grain wide open, so the meat here tastes more intensely of beef than anything off the back.

Muscle that works hard accumulates myoglobin, the protein that stores oxygen inside the fiber. More work means more myoglobin, darker meat, and a stronger, more mineral flavor. The breathing muscles sit at the far end of that scale, because they contract without a pause from before the animal is born until the day it dies.

That is why cuts from here taste the way they do. It is not marbling, and it is not aging. It is the job the muscle had.

The grain is the whole technique

Along with the flavor comes a coarse, loose structure — fiber bundles you can pick out from across the room, running in one obvious direction. That is good news and a trap. Cut thin across those bundles, every bite is short and gives way immediately. Cut along them and the same meat is a mouthful of rope. No marinade, tenderizer or resting period changes that. It is geometry, not chemistry.

The same open structure means these cook in minutes. Wide fibers let heat in fast and let moisture out just as fast, so past medium-rare they tighten and dry very quickly.

One per animal

One of the diaphragm cuts is unpaired — a single muscle hanging off the last rib near the kidney, so there is exactly one on each carcass. Butchers kept it for themselves, which is where the phrase "butcher's steak" comes from. It also carries a thick tendon down its entire length that has to be cut out before cooking, which is why it usually arrives as two long halves rather than one piece.

The rib end wants the opposite treatment

The bones running down from the rib section carry the other kind of meat this primal is known for: thick, well-marbled and sitting directly on bone. That meat is worked, and it wants hours of low wet heat rather than minutes of fire. Cut thick between the bones it is a braise; cut thin across them, the Korean way, it is a two-minute grill. Same meat, opposite methods, and the only variable is which direction the saw went.

How it eats

Loud and mineral — closer to what people actually mean by "beefy" than anything from the loin. Not tender in the melting sense: these cuts give way because they are cut short, not because they are soft. Serve them sliced, never whole.

Common questions

What is the difference between skirt and flank?

Different muscles from different places. Skirt is diaphragm, from under the ribs. Flank is abdominal wall, further back along the belly. They get swapped for each other because both are flat, coarse-grained and want identical handling, but skirt carries more fat and more flavor and cooks faster.

Is there a difference between inside and outside skirt?

Yes, and they are not the same muscle. The outside one is thicker, fattier and more tender. The inside is wider, thinner and leaner, and it is the one most often sold at retail. Outside skirt is the better piece and harder to find, because a lot of it goes to restaurants.

Do these cuts need a marinade?

Not for tenderness. Acids and enzymes barely get past the surface however long you leave them, so an overnight soak gives you a thin mushy exterior and an interior exactly as it was. A marinade earns its place on flavor and browning. Salt does more useful work and gets further in, if you apply it an hour or more ahead.
