Cheesy Bacon Cauliflower Mash

Creamy cauliflower mashed with cream cheese, sour cream, and two cheeses, finished with crispy bacon on top.

    Preheat oven to 350°F.

    Bring a pot of water to a boil. Once boiling, add the chopped cauliflower with a pinch of kosher salt.

    When cauliflower is soft, drain and return it to the pan.

    Add the remaining ingredients, reserving half the cheddar and 2 pieces of bacon. Using a potato masher or electric beater, smash everything together until creamy.

    Pour into a greased casserole dish and top with remaining cheese and bacon.

    Bake until cheese is melted, about 15-20 minutes.
