Sweet peach preserves, rich maple syrup, and a hint of bourbon make a glaze that turns this ham into a centerpiece.

Method

Directions

  1. 1
Preheat smoker or oven to 325 degrees F.
  2. 2
Pat the ham dry. Score the surface in a shallow diamond pattern.
  3. 3
Rub the entire ham with Dijon mustard.
  4. 4
In a small bowl, mix brown sugar, cinnamon, cloves, nutmeg, salt, and pepper. Press onto ham to coat.
  5. 5
In a saucepan, combine peach preserves, maple syrup, bourbon, orange zest, and juice. Simmer 10-15 minutes until slightly thickened.
  6. 6
Place ham in a roasting pan with a rack or directly on smoker grates. Cook until internal temp reaches 130 degrees F (about 1.5-2 hours).
  7. 7
Begin glazing the ham every 15 minutes with the peach maple bourbon glaze.
  8. 8
Continue cooking until internal temp reaches 140 degrees F (about 30-45 more minutes).
  9. 9
Remove from heat, tent with foil, and rest 15 minutes.
  10. 10
Slice, serve, and drizzle with remaining glaze if desired.
