A 7lb bone-in ham gets the royal BBQ treatment in this smoky, sweet, and savory recipe. Perfect for holidays or weekend feasts, the ham is smoked low and slow, braised in maple syrup and stock, then glazed with a rich buttery sauce for the perfect finish.

Method

Directions

  1. 1
Prep the ham: Pat the ham dry with paper towels. Coat all sides evenly with BBQ rub and let sit at room temperature for 30 minutes while your smoker comes to temp.
  2. 2
Smoke it: Preheat smoker to 225°F. Place ham directly on the grates and smoke until internal temperature reaches 110°F (about 1.5–2 hours).
  3. 3
Braise: Transfer ham to a disposable aluminum pan. Pour in the chicken stock and 1/4 cup of maple syrup. Cover tightly with foil.
  4. 4
Continue cooking: Return to the smoker and cook until internal temperature reaches 140°F (another 1.5–2 hours).
  5. 5
Glaze: In a bowl, mix together the smoked sea salt butter, remaining 1/4 cup maple syrup, and BBQ sauce. Uncover the ham and brush generously with the glaze.
  6. 6
Finish on smoker: Place ham back on smoker uncovered and cook for 5–10 minutes, or until the glaze becomes tacky and caramelized.
  7. 7
Rest and serve: Let the ham rest for 10–15 minutes before slicing. Enjoy!
