A traditional Irish side of bacon and cabbage made with just a handful of pantry staples — perfect for Saint Patrick's Day or any cozy dinner.

Method

Directions

  1. 1
Begin by preparing the vegetables. Chop the cabbage into bite-sized pieces, dice the onion, and mince the garlic.
  2. 2
Cut the bacon into bite-sized pieces and cook in a large pot. Cook until browned, but not overly crispy.
  3. 3
Add in your chopped onions and garlic. Sauté until they are soft and fragrant.
  4. 4
Next, add the cabbage to the pot. Add chicken broth to cover the cabbage, and season with salt and pepper. Stir to move the cabbage to the bottom of the pot and bring the bacon upward.
  5. 5
Bring the pot to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes. You want the cabbage to be tender but not mushy.
  6. 6
Once the cabbage is done cooking, remove it and the bacon from the pot with a slotted spoon and transfer it to a serving dish.
  7. 7
Serve the bacon and cabbage hot, and enjoy!
