Sous vide chicken breasts for perfectly cooked, supremely tender chicken every time. With no added fat, this is one of the healthiest ways to prepare chicken.
Season and bag
Liberally season chicken breasts with salt and pepper. Place each breast in a vacuum-sealed bag with a few sprigs of thyme.
Cook in the water bath
Place the bag in a hot water bath for 1 hour and 30 minutes at 145°F (62.7°C).
Rest, re-season, and sear
Remove from the bag and let rest for 1-2 minutes. Re-season each breast with salt and pepper. In a pan over medium-high heat, sear each side for 1-2 minutes.
Slice and serve
Let the chicken rest for about 3 minutes, then slice and serve.
