This is the perfect filet mignon. There is simply nothing better. If there is, I can't wait to try it. Filet is usually not top in my list when choosing a cut, but after trying the Miyazaki Gyu A5 ribeye and tasting how decadent that was, I thought similar marbling in a filet would be fantastic. It blew us away! My only complaint is that we wanted more!

5th or 6th time making A5 from CC and it’s unbelievable every time! Suggestion is to serve with some Himalayan Salt! I cook mine rare to a 105 internal temp.

Just lovely. My wife wanted hers medium which I think was a small mistake. Medium rare or rare are perfect for this cut. Tenderness beyond belief.
