Rich, but with enough body. Cooked sous vide at 128°F/90mins was a perfect way to prep it for sear.

Best ribeye I’ve ever had

Excellent. With that said I would not say that it stood out among other A5 Wagyu. We did a side by side actually and did not find the olive to have anything unique about it to separate it from the others. But still a great wagyu steak

I've been a very satisfied Crowdcow customer, buying Olive Wagyu from Crowdcow for the last 2 years. Unfortunately, the last order I received, a batch of 4 Olive Wagyu Ribeye pieces at 13oz each, were a bit disappointing. The fat to meat ratios were quite disproportionate. Of course I'm not talking about the delicious webbing of marbling deliciousness, I'm referring to large masses/singular blocks of fats that envelop a strong percentage of the total weight. Also, I've noticed this for the previous 2-3 times I've ordered olive wagyu. I don't seek a return, I just want crowdcow's olive wagyu quality of offerings to return to what it once was. Until then, I will avoid purchasing olive wagyu from Crowdcow going forward. Spending about $1k for what seemed like 40% fat, 60% meat just doesn't seem worth the investment.

In our unwavering quest for exceptional Wagyu, we discovered a micro-batch of Olive Wagyu, a rare beef from Japan's smallest prefecture. Raised on olives toasted using the Seto Inland Sea method, this Wagyu boasts the highest levels of healthy fats with a remarkable 65.2% oleic acid content. This delivers a melt-in-your-mouth texture and bold umami flavor.
Olive Wagyu is possibly the smallest-batch Wagyu available, boasting a herd of only 2,200 and a minimal monthly harvest.
Crowd Cow brought Olive Wagyu to the U.S. in 2018, forging direct relationships with the farmers of Shodoshima Island. We continue to be the most trusted provider of Olive Wagyu, as evidenced by our inclusion of certificates of authenticity and dates of harvest with every order.
