Cod can be wonderful or the scourge of the sea, LOL. I do a fair bit of trimming on these filets. Very easy to overcook cod and then you are left with a hunk of rubbery fish. I found poaching in tomato broth with cajun seasoning is our favorite way to eat this fish.
