1. Oil, salt & pepper on both sides
2. Add oil to the pan
3. Add your favorite herbs
4. Sear medium-high heat, 3 minutes each side
5. Baste with juices
6. Cook to 155℉ or until juices run clear
7. Cover with foil, let rest for 5 minutes
8. Slice & serve!
