It is the wrong cut to be called bacon. Pork bacon comes from the belly, where fat and meat are layered through one another; as it cooks, that fat renders out and the strip effectively fries itself. Duck bacon is cured breast — one lean muscle with fat along an edge and under the skin. There is far less fat to give up, and once it is gone, nothing is protecting the meat.

So cook it cooler. Lay it in a cold pan, bring it up to medium-low, and turn it often. Six to eight minutes is usually enough. Bacon-hot heat will have the strips dark and brittle before the fat edge has rendered, which is the exact opposite of what you want.

It is saltier than it looks and sweeter than it tastes. Cures for duck bacon usually carry sugar, and sugar burns well before meat does — another reason to keep the heat down. Taste before you salt whatever you are putting it in.

Where it earns its place: wrapped around something lean that needs fat and smoke, crumbled through a salad or a pasta, chopped into a stuffing. Where it doesn't: anywhere you were counting on the grease. It will not give you enough to fry an egg in.

Is duck bacon leaner than pork bacon?

Yes, and it is the easier way: a sheet pan at 350°F for about ten minutes, checked early. Oven heat is gentler and more even than a burner, which suits a strip with no margin.

Is it really made from duck breast?

Usually, yes — cured, smoked and sliced across the grain, which is why the strips look like meat with a fat line rather than streaky belly. Some producers use leg meat instead, which comes out darker and chewier.

Does it need to be cooked?
