No need to head to a sushi restaurant — build your own poke bowl at home with wild-caught ahi tuna poke cubes. Use this as a guide for any poke bowl.
Thaw
Place your frozen ahi poke cubes in the refrigerator the night before you plan to serve them. This will allow plenty of time to thaw evenly.
If you're short on time, place the cubes (still in their sealed packaging) into a bowl and fill it with water that is slightly colder than room temperature — water that's too cold will slow the thawing, and hot water will degrade the texture. Make sure the fish is fully submerged; if it floats, weigh it down with a smaller bowl or plate. Add fresh water every 20 to 30 minutes until fully thawed.
Marinate
Once the ahi is thawed, mix your favorite marinade, add the cubes, and refrigerate until ready to serve. If your marinade contains citrus, the fish will start to cook as it sits.
Build the bowl
Divide rice into bowls and spoon the fish and your favorite vegetables or toppings on top.
Garnish and serve.
