Brinner Ground Beef Chilaquiles

Breakfast for dinner: a meaty ground-beef chilaquiles bake topped with cracked eggs, enchilada sauce and melty cheese.

    Preheat oven to 375 degrees.

    Slice the tortillas into triangles. Spread them out on a cookie sheet and drizzle with olive oil. Bake for 5 minutes, until slightly browned and toasty.

    While the tortillas are in the oven, heat a large saucepan on the stove. Add the ground beef, salt and pepper to taste, cumin and chili powder. Brown then set aside.

    In a large saucepan (you can reuse the one from browning), layer the crispy tortilla triangles on the bottom. Add enchilada sauce, grated cheese, ground beef and black beans. Repeat the layers.

    Bake for 15 minutes. Pull it out and use a spoon to make 4 little nests in the top layer for the eggs. Season with salt and pepper, then bake for about 10 more minutes, until the eggs are cooked to your liking.

    Top with pico de gallo or avocado and serve.
