    Heat a large wok or sauté pan over medium-high and add oil. Once hot, add the sliced onions and cook until caramelized. Remove and set aside. Meanwhile, cook 3-4 cups of rice.

    In a medium bowl, combine ground beef, garlic, and 1 tbsp soy sauce. Season with salt and pepper, mix, and form 4 patties about 1/2 inch thick.

    Heat the same pan to medium-high and swirl in oil. Cook the patties about 4 minutes per side for medium-rare. Remove and set aside until ready to serve.

    In the same pan over medium-low, add the caramelized onions, beef stock, and remaining soy sauce. Simmer to reduce, then whisk in the cornstarch slurry and gently stir to thicken. Season with salt and pepper to taste.

    Heat a small pan over medium-high and swirl in oil. Crack in the eggs. For sunny-side up, cook 1 minute, then cover and cook 2-3 minutes more, keeping the yolk soft.

    Divide the rice and patties among four bowls. Spoon over the onion gravy generously, top each with an egg, and serve hot.
