Oven Roasted Chuck Steaks with Wine Sauce

Baking chuck steaks in dry white wine tenderizes the cut and keeps it juicy under a fresh-herb butter sauce.

    Preheat oven to 400°F. Pat steaks dry and sprinkle both sides liberally with salt and pepper.

    Heat the olive oil in a heavy skillet over moderately high heat until the oil is hot but not smoking. Sear the steaks so they brown evenly on all sides. Add the wine to the pan and scrape the bottom to remove any stuck bits.

    Pull out a sheet of aluminum foil measuring about 8 by 8 inches. Place the steaks, butter, shallot, and herbs on the foil. Begin folding the foil edges upward to form an enclosed container. Pour the wine from the skillet into the container and seal up the foil. Bake for 1 hour.

    Serve steaks with sauce drizzled over them. Add salt and pepper to taste.
