Turkey Noodle Soup

A hearty, herb-filled homemade soup that turns leftover Thanksgiving turkey into a comforting weeknight meal.

    Warm oil in a large dutch oven and add carrots, celery, onion and saute over medium-high heat until vegetables soften, about 7 minutes.

    Add garlic and saute for 1-2 more minutes.

    Add broth, sage, rosemary, thyme, oregano and pepper then bring to a boil. Let boil until vegetables are fork-tender, about 5 minutes.

    Add your noodles of choice and check liquid level. If you need more liquid, at 1-2 cups of water and boil until noodles are soft and fully cooked, about 8-10 minutes.

    Add 2-3 cups of turkey and boil until turkey is warmed, 1-2 minutes.

    Add salt or additional pepper to taste, serve and enjoy!
