The breast. Cattle and bison have no collarbone — the front legs are slung from the body in muscle — so the pectorals carry the animal's front end for its whole life. That is where brisket's connective tissue comes from, and why no amount of heat makes it quick.

It is two muscles, not one. The flat (pectoralis profundus) is the lean, even slab most people picture. Lying across it at an angle is the point (pectoralis superficialis), separated by a seam of fat. Their grains run in different directions, so a whole brisket cannot be carved in one direction — separate them at the seam after cooking and slice each across its own grain.
On beef the point is the prize. Here it mostly isn't. Burnt ends exist because the point is fatty enough that cubing it and putting it back in the smoker renders it into something rich. A bison point has far less to render, and comes out closer to a firm, well-seasoned pot roast than to the thing that made burnt ends famous. Worth knowing before you plan a cook around them.
Leave every scrap of fat on. Standard beef advice is to trim the cap back to about a quarter inch so smoke can reach the meat. A bison brisket generally arrives near that already. Trim nothing — what is on there is the entire moisture budget for a cook measured in hours, and there is no marbling underneath to make up a shortfall.
Wet heat is the safe route, and there is no shame in it. A covered braise converts the collagen to gelatin without asking the meat to survive ten hours of dry air. If you want smoke, take the bark in the first two or three hours, then wrap tight with liquid and finish it wrapped.

Expect the stall. Somewhere around 150–170°F the internal temperature stops climbing, sometimes for hours — moisture evaporating off the surface cools the meat about as fast as the cooker heats it. It is not a dying fire or a broken thermometer, and turning the heat up mostly punishes the bark. Wrapping stops the evaporation and ends the stall.
Rest at least an hour, ideally two, in a cooler or a turned-off oven. Slicing straight off the heat spills juice you spent all day building.
Separate the point from the flat at the fat seam before carving, then slice each across its own grain, about as thick as a pencil.

Common questions
Can I make burnt ends from bison brisket?
Not the ones you are picturing. Burnt ends work because the point is fatty enough to render into something rich when cubed and returned to the smoker. A bison point has much less fat to give, so you get firm seasoned cubes instead. Sauce and a shorter second cook help; they do not close the gap.
How much fat should I trim off before cooking?
None. The usual instruction is to take a beef cap down to about a quarter inch, and bison generally arrives near that already. Everything on it is the moisture budget for a cook lasting many hours. This is the one cut where the standard beef prep step is actively wrong.
Should I buy the flat or the point?
The flat, for anything you plan to slice — it is even in thickness and carves into neat pieces. The point is thicker and grainier, and is better shredded or cubed. A whole packer is both still joined: the best value and the most work.
Why did the temperature stop rising for three hours?
That is the stall, and it is normal. Evaporation from the surface cools the meat at roughly the rate the cooker heats it, so the internal temperature plateaus, typically between 150 and 170°F. Wrapping tightly stops the evaporation and it climbs again. Raising the cooker temperature instead just ruins the bark.
