Corned Beef and Cabbage

A set-and-forget classic — corned beef simmered with potatoes, carrots, and cabbage until everything's fork tender.

One of the simplest dishes to prepare with minimum input for maximum output. Set and forget the corned beef on the stovetop, in a slow cooker, or in the oven (our favorite) and let your kitchen fill with the aroma.

    Place the corned beef in a dutch oven or large pot and cover with water. Bring to a boil, then reduce to a simmer.

    Simmer the beef for 2-3 hours (about 50 minutes per pound), until fork tender.

    20-30 minutes before the beef is done, add the potatoes and carrots and cook until almost tender. Add the cabbage and cook another 15 minutes, until tender.

    Remove the vegetables to a serving dish. Move the meat to a cutting board and let it rest 5-10 minutes before carving.

    Serve with horseradish or a sauce of your choosing.
