German Beer-Braised Brisket

A slow-braised brisket built for hosting. Crack open a beer to sip on while you cook — the rich German beer in the braise leaves you and your guests full and happy.

    Preheat the oven to 350°F.

    Pat the brisket dry and generously sprinkle with salt and pepper.

    Heat oil in a large Dutch oven over medium-high heat. Cook 10-12 minutes, or until the meat is brown on all sides. Remove and set aside.

    In the same Dutch oven, combine 1/4 cup of the beef stock, celery, carrots, bay leaves, onions, and thyme and cook 4-6 minutes, until vegetables soften and brown. Add in beer and bring to a boil. Cook 2-3 minutes, until liquid is reduced by half.

    Add brisket back to the Dutch oven. Add remaining beef stock. Cover pot and cook in oven for 3.5 hours. Remove lid and cook for an additional 30 minutes.

    Remove and let brisket rest in the liquid for 20 minutes.

    Remove brisket from the pot, let cool, and slice against the grain.

    Drizzle additional braising liquid on top, serve, and enjoy.
