Beef and Pepper Kebabs

Beef-and-pepper kebabs marinated in lemon, garlic, and oregano — perfect for late summer with pita, hummus, and tzatziki.

    In a large freezer bag or medium bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper and mix well. Add the cubed steak and marinate for at least 2 hours (preferably overnight).

    Soak the bamboo skewers in cold water for 30 minutes before grilling to prevent burning. Thread the marinated steak and bell peppers onto the skewers.

    Heat the grill to 400°F. Grill the kebabs for 4-5 minutes per side, then remove and let rest for several minutes. While the grill is still hot, warm the pita (about 1 minute). Serve with pita, hummus, and tzatziki.
