    Preheat your oven to 400 degrees F.

    In a cast-iron skillet over medium heat, cook the sausage. Using a slotted spoon, remove the sausage. Add the butternut squash, red bell pepper and onions to the pan and cook until tender, about 10 minutes.

    Meanwhile, in a large bowl whisk together the eggs and milk until well combined. Add salt and pepper to taste.

    Return the sausage to the pan, then pour in the egg mixture and cook over medium heat until the eggs are nearly set, about 8 minutes.

    Transfer the pan to the oven and bake until the eggs are set, about 10 minutes. Serve.
