Fire & Ice Weeknight Chili

    Heat oil in a large saucepan.

    Dice the onion and bell peppers and add to the pan. Cook until the onions are slightly translucent and the bell peppers are soft.

    Add the ground beef and brown.

    Once the ground beef is browned, add the crushed tomatoes, pinto beans, chicken stock, and a generous amount of chili powder. Season with salt and pepper to taste.

    Let the chili simmer for 25 minutes. Finally, plop 3 big scoops of chocolate ice cream into the chili for the fire-and-ice finish. Serve warm.
