Five Pepper Sausage Breakfast Skillet

A loaded one-pan breakfast scramble built around five-pepper pork sausage. Crisped potatoes, soft peppers and onion, and eggs cooked right in the middle make it an easy way to start the morning.

    Pre-heat a skillet or cast-iron skillet to medium heat.

    Cube the potatoes, while the skillet is pre-heating.

    Add 1 tablespoon of olive oil to the skillet. Add cubed potatoes and cook until potatoes are soft and beginning to crisp.

    Add onions and bell pepper. Cook until onions and bell pepper are soft.

    Add sliced sausage, it is pre cooked but needs to warm up.

    Create a circle in the middle of skillet (to add the eggs), grease the space you have created with olive oil, add eggs. Allow 5-7 minutes for eggs to cook to your preference.

    Once eggs are cooked, remove from heat and serve.

    Optional: garnish with a touch of sliced green onion.
