    Prepare the sauce. Squeeze grated cucumber with your hands through a cheesecloth to remove excess liquid. In a bowl, mix the cucumber and the rest of the sauce ingredients together until smooth.

    Make the burgers. Add all burger ingredients together in a bowl and mix with your hands until just combined. Form into about 3 to 4 patties.

    Heat grill to medium-high heat (or for stovetop, heat cast iron skillet to medium-high heat with 2 tablespoons of olive oil). Season burgers with salt and pepper. Grill or sear until browned, about 4 minutes per side for medium-rare.

    Serve burgers on a toasted/grilled brioche bun or in a pita with toppings of your choice and a spread of tzatziki sauce.
