Instant Pot Bone Broth Chili

A weeknight Instant Pot chili built on rich beef bone broth, ground beef, and a pantry-spice backbone.

Instant Pot chili is the kind of weeknight dinner that asks very little and gives a lot back. Bone broth deepens the base, the pressure cooker shortcuts the simmer, and a handful of pantry spices do the seasoning work. Garnish heavy and serve in big bowls.

    Turn the Instant Pot on to saute and add the avocado oil.

    Once the oil is hot, add the ground beef and brown. When the meat is mostly browned, add the onion, jalapeno, garlic, and spices. Saute 3-5 minutes.

    Add the beef bone broth, tomatoes, and beans.

    Close the lid, seal the valve, and set to manual high pressure for 20 minutes.

    Once done, let the pressure release naturally for about 10 minutes, then turn the valve for a quick release.

    Ladle into bowls and garnish with green onion, grain-free tortilla chips, cheese, sour cream, or your favorite toppings.
