Mediterranean Beef Skewers

Lemon-bright, herb-spiced ground beef kofta-style skewers, charred quickly over a hot grill.

Directions

    Mix all of the ingredients (except the skewers and finishing oil) until roughly combined. Avoid over-mixing to prevent gumminess.

    Separate the mixture into ten parts. Roll and flatten each part along a skewer so that it is about 1-inch wide and fits about 6 inches up the skewer.

    Brush each skewer with oil and season with salt and pepper.

    Over a hot grill, char and cook the skewers until done, about 3 minutes per side.
