How To Cook Wagyu Beef

Authentic A5 Japanese Wagyu is rich enough that a few bites go a long way. Cook it in small portions and savor it as you go — and never over open flame.

Directions

  1. Cut into bite-size portions. Slice the steak into strips roughly 1 inch by 4 inches and cook one or two at a time.
  2. Season lightly. A pinch of sea salt — sel gris works well — is all it needs. Pepper is optional. You can also season after cooking; either way, keep it light so the marbling stays front and center.
  3. Sear on stainless steel. Place the strips directly on a hot, dry pan and sear 1 to 2 minutes per side. No oil needed — the A5's own fat will render and provide plenty.

Tips

  • Skip the open flame. Wagyu's fat is too delicate for a grill.
  • Serve immediately, while the fat is still glistening.
