A Crowd Cow Field Guide

These stuffed pork chops are rich, sweet, and savory — perfect for holidays and special events. Because they're ready to cook, there's no prep required.

Instructions

  1. Preheat the oven to 375°F (190°C). Create a pocket in each pork chop by cutting a slit into the side, careful not to slice through the other side.
  2. In a bowl, combine breadcrumbs, Parmesan cheese, herbs, garlic, dried fruit (if using), and melted butter. Season with salt and pepper and mix until the stuffing comes together.
  3. Spoon the stuffing into each pork chop pocket. Use toothpicks to secure the openings.
  4. Brush each stuffed chop with olive oil and season both sides with salt and pepper.
  5. Heat a large oven-proof skillet over medium-high heat. Add the stuffed chops and sear for 2–3 minutes on each side, until golden brown.
  6. Transfer the skillet to the oven. Bake for 18–20 minutes, or until the pork chops reach an internal temperature of 145°F (63°C). Exact time depends on thickness.
  7. Let the chops rest for a few minutes after removing them from the oven. Remove the toothpicks before serving.
