Olive Wagyu is the world's rarest beef. A handful of farms in Japan's remote Kagawa Prefecture raise fewer than 2,000 of these animals each year, in partnership with local olive producers whose pressed olive peels go into the feed.
We met Olive Wagyu's inventor, Masaki Ishii, and worked directly with Kagawa's governor Keizo Hamada to bring Olive-fed Wagyu to the United States for online sale for the first time. Shortly after, Olive Wagyu from Kagawa took the top honor for best fat quality at Japan's Wagyu Olympics, a nationwide competition held once every five years.
