    To thaw, place mahi mahi packages in the refrigerator the night before you plan to cook them.

    Take mahi mahi out of packaging and pat the portions dry with paper towels.

    Place all seasonings in a mixing bowl. Add 2 tbsp coconut oil and mix well.

    Coat mahi mahi portions with the marinade mixture. Spread and pat the marinade onto the fish; the consistency will be slightly pasty, more like a dry rub.

    Rest the fish in the refrigerator for 20 minutes.

    Heat 4 tbsp of coconut oil in a cast iron or nonstick pan over medium-high heat.

    Sear the portions until golden brown on one side, 4-5 minutes. Do not move them around in the pan. Flip and cook for another 4-5 minutes.

    Serve immediately with rice or salad.
