Beef kidney shines when pan-fried until crisp and sautéed with garlic, butter, and lemon.

Method

Directions

  1. 1
Pull and trim the white lining off the kidney, then cut the kidney into 1-inch cubes.
  2. 2
To reduce the strong flavor, soak the cubes in cold water with a little lemon juice or vinegar (or in salted cold water) for 2 hours. Alternatively, blanch them in boiling water with vinegar or lemon juice for 20 minutes.
  3. 3
Pat dry, season with salt and pepper, and dredge well with flour.
  4. 4
Heat olive oil in a pan over high heat. When the oil is hot, add the kidney cubes and fry until cooked through. Remove the kidney from the pan.
  5. 5
In the same pan, add butter, garlic, and coriander, and cook until the garlic turns light brown. Return the kidney to the pan, add lemon juice, and cook for 30 more seconds. Finish with a liberal sprinkle of salt and pepper.
