Enhance the natural sweetness of Dungeness crab with a quick char on the grill and a toss in lemony compound butter.

Method

Directions

  1. 1
Defrost the crab overnight in the fridge.
  2. 2
Set up your grill for medium-high direct heat.
  3. 3
Preheat a cast iron pan on the grill. To create a compound butter sauce, add all ingredients except the crab, stir, and allow the butter to melt.
  4. 4
Grill the crab 3 minutes per side — just enough to slightly char and impart smoky flavor (the crab comes pre-cooked, so you're just warming it through).
  5. 5
After grilling, toss the crab into the butter-lemon mixture. Let the sauce bubble and reduce for about 3 minutes over the direct heat. Be sure to thoroughly coat every piece of crab in the sauce.
  6. 6
Serve immediately with lemon and grilled sourdough.
