Olive Wagyu is the rarest beef in the world. It traces back to Shodoshima, a small island in Japan's Kagawa Prefecture, where one farmer — Masaki Ishii — began feeding pressed olive peels to his cattle. The result is beef with elevated levels of heart-healthy oleic acid, deep umami, and an unusually succulent texture.
