An easy, healthier take on fried shrimp using the air fryer. The coconut-and-panko crust crisps up beautifully and pairs perfectly with sweet chili dipping sauce.

    Mix flour and seasonings together in a bowl.

    In a second bowl, mix the coconut flake and panko.

    In a third small bowl, beat the eggs.

    Peel the shrimp, leaving the tails attached. Lightly rinse with cold water.

    Holding each shrimp by the tail, dredge in the flour and shake off the excess. Dip in the egg, then dredge in the coconut-panko mixture, pressing to adhere.

    Place shrimp in a single layer in the air fryer (likely two batches). Spray with cooking spray on both sides.

    Air fry at 400℉ for 8 minutes, flipping at 4 minutes. Repeat with remaining shrimp.
