    Heat butter in a large pot over medium. Add onion, carrots, and celery and cook for 7 minutes, until soft.

    Season with salt and pepper, then stir in garlic and tomato paste. Cook for 2 minutes, until the paste coats the vegetables and the garlic is fragrant.

    Sprinkle flour over the top and cook for 1 minute.

    Pour in seafood stock and wine, then add the bay leaf and thyme.

    Reduce heat and simmer until the liquid reduces and the flavors combine, stirring occasionally, about 30 minutes.

    Remove the bay leaf and thyme, then puree with an immersion blender until smooth.

    Return to medium-low heat. Stir in the heavy cream and lobster meat, and cook for 5 minutes, until warmed through.
