Coming from the same ‘Chuck Primal’ region as the Chuck Roast, the Shoulder Roast differs by its fat content. Averaging 3 lb., it is leaner in comparison to the variegated fat lines you may find in the Chuck Roast. This requires a bit more care when roasting, but is enjoyable cooked medium rare.
